「ワシャア、広島モンじゃけんのう」
今時こんなコテコテの喋り方する人はいないと思いますが、広島出身の自分としては時折り無性にソウルフードのお好み焼きが食べたくなります。今年は帰省できなかったし、週末は雨で一層の自粛（引きこもり）なので久々に作ってみました。スーパーに行くと薄力粉が置いてなく、関西風の生地はあったのでそれで代用です。お好み焼きをブログに書くときは啓発を兼ねて必ず添えるのですが、広島県人に広島風お好み焼きと言っても通じません。真顔でそんな食い物は無いと返されるか、お好み焼きに似せた別の何かと思われます。
関西風生地はボテッとしてるから水を多めに入れて、ホットプレートへ丸くクレープみたいに広げます。その上にキャベツともやしをどっさり載せて豚バラでをかぶせます。天かすを買い忘れたから冷蔵庫に残っていた乾燥小エビをまぶします。イイ感じに焼けてきたらひっくり返し、隣で焼きそばを焼いてその上に載せ、更に卵を焼いてその上に載せます。最後にまたひっくり返して出来上がり。
ホントはヘラで切りながら食べるのですが、無いので大皿に移してピザカッターで切ります。一口頬張ったら野菜の甘みと肉の旨味がたっぷり押し寄せて、香ばしい香りが嵐のように鼻から抜けます。紅しょうがの酸味がいいアクセントなんですよね。一緒にビールをグビッとあおるとたまらんっ！一気に食べてしまいます。さて次を焼こうとしたらキャベツが残り少ないので刻んで生地と混ぜ合わせ、今度は”関西風”お好み焼きにして焼いて食べます。ドカンと来るものがないから少々物足りないけど、これはこれで美味しい。
コロナ禍が収まったら広島へ帰省してお好み焼き食べ歩きしてきます。
